ZESTY ZEN SALAD
This sweet & tangy salad is bursting with flavor. Add grilled salmon, shrimp, chicken or tofu and make it a complete meal that's sure to become a weekly family favorite!
4.5 oz bag of New Day Farms Organic Sunflower & Radish Microgreens
1 cup carrots, diced
1 cup celery, diced
1 cup chow mein noodles
1/2 cup roasted unsalted peanuts
4 scallions, chopped
3 mandarin oranges, peeled and separated
Dressing
1/2 tbsp finely chopped ginger
1/2 tbsp finely chopped fresh garlic
1-1/2 tbsp low-sodium soy sauce
1 tbsp rice wine vinegar
1/2 tbsp toasted sesame oil
1/2 tbsp sweet chili sauce
Juice from one freshly squeezed line
Combine all ingredients
Mix well with dressing
Plate and nourish your body and soul!
